Volunteer hours will help you a lot. My roommate did weekly volunteering at a hospice center and shadowed at hospitals in her area during winter and summer break. Aside from just your GPA, you need to show that you have passion about this field. Having experience on your own time shows the people reviewing your application that it wasn't something you decided to do on a whim. As for interviewing, go to the Student Success Center. They have interview help there for all sorts of jobs and I'm certain they could find you someone who's been through the process to assist you.
