Grade cuts serve a purpose. It's not that sororities are being arbitrary and needlessly selective. It's that college is difficult and if you can't do better than a 3.0 or 3.2 in high school, where the most popular grade given (according to national research) is an A, then perhaps you should reconsider joining a sorority, which puts more demands on your time. Sororities expect 18-year-olds to be able to manage their time and set priorities, but if you had less than a 3.0 in high school, perhaps that's a problem for you and you might very well struggle in college and not make grades. No one wants that. People go to college first and foremost to get an education. Going Greek is purely optional, but if you have trouble studying, sorority life might not be for you.
