Sigma and Phi Mu usually do an open rush. They usually table and you can sign up to get information and show up to events. For SK, you have to know a girl in the house to get an invite and they have a sort of "mini recruitment" where you go to events during the week and then a pref event if they invite you back for that. Alpha Phi and DG only take like, ten girls when they do COB and I have no clue how the process works. I've heard when top tier/upper middle tier houses COB, you have to know several girls in the house and they don't even have events, they just extend a bid. Every house usually only takes the exact number of spots open.
