Joining a national sorority or fraternity (member of IFC) is only for undergraduates. If you see grad students involved with fraternities and sororities it is because they are alums and joined as undergrads. There may be local fraternities and sororities that I am unaware of that invite grad students. Honestly though, as a grad student you will probably be too busy! Greek like is a big commitment. Also, membership costs anywhere between $4,000-$10,000 (if not more) per school year so it is a big commitment regarding both time and money. There are a lot of international grad students here, so I'm sure you can find a good support system,and I'm sure they can offer advice on social activities. Even though you are not coming as an undergrad I think it's really cool that you were at least interested in asking about Greek life at Alabama. I hope you enjoy your time here!
