Packets with your information go to whoever is writing your recommendation/letter/RIF/Sponsor Form or whatever the sorority calls it. You do not send anything to the sorority houses; most of them are closed over the summer anyway. Many groups do online submissions now, so the alum writing your rec will do this and the form is sent electronically to the chapter at the school you are attending. Each chapter recruitment team will get a summary of the information you provide when you sign up.
