It's really just tradition. Chi Omega was the first sorority chartered on the Ole Miss campus. DG charted earlier on a different campus close to Ole Miss. Back then only the wealth and more prestigious families could send their daughters to college so I guess Chi O has been able to hang on to some of that prestige for well over a 100 years ago. Usually the first few Sororities chartered on any campus maintain their top tier spot unless something drastic happens. The first Sororities on the Ole Miss Campus were Chi O, Tri-Delt, Phi Mu, KD and DG. In that order except for DG, I can't find their charter date for Ole Miss. Those Sororities tend to have more active local (Mississippi/Memphis) alumni which provides more support to the Sorority, which encourages legacies. They appear more prestigious because tradition says they are.
