If you're joining a sorority just for the social life, drop out now. Girls who join just for the social aspects do not enjoy being in a sorority. It ends up being too time consuming and surprises them when they find out its not all about partying. If you were actually interested in the sisterhood aspect, you'd give those other houses a try. To answer your questions, some guys care. Especially guys on top tier frats. Some guys don't care though. Generally, non-greeks don't go out as much their freshman year because they don't know of things. But if you make a bunch of friends and have a good social circle, you'll probably be fine. You sound like you don't really want to be in a sorority for the right reasons based on your questions. If I were you I'd give those other houses a chance. They actually like you, even if you don't know if you like them. But then again, houses have 200 girls and you've met, what, 12 of them? Plus you'll have an entire pledge class you have no idea whether you'll like or not. Good luck with whatever you choose.
