Greek life at uncw is pretty relaxed, so don't worry too much about "resume". If you're that concerned, you could start volunteering now every week or 2 but being at community college with fewer activities to pick from is easy for any half-decent chapter to overlook if you're a cool, normal/fun, decent looking (i.e., good hygiene, know how to dress yourself) girl. One red flag is a girl that's TOO involved who won't have any time to devote to the chapter, so at least you're good there. You still get a big, and probably will have the option to live in sorority housing - but you more than likely won't want to because it's usually sophomores and it's a pretty crappy setup anyway. You'll probably want to move off campus anyway since options off are cleaner/newer and generally cheaper (most juniors and nearly all seniors do). Plus, no RAs. To touch on age, my chapter recruits anywhere from 1-3 or 4 juniors each fall, and I'm pretty sure it's required that each chapter takes relatively even numbers of older girls and freshmen. Again, FSL at uncw is probably much more relaxed than you're expecting. It's a pretty fun community and consists mainly of people trying to get involved and have a good time. So go through recruitment with an open mind and you'll end up where you need to be. Good luck.
