Do we have to have recs for every house? Like if I don't get a rec for Gamma Phi will Alpha Chi see that and think i'm not maximizing my choices?? just an example not saying i dislike gammi phi or want to go alpha chi

No, only that house knows if you send them a rec. Although if you can it's good to have one for every house.

run a HUGE risk of being dropped by houses you don't get recs for. Girls without recs are easy girls to cut first round to get the numbers down. YOU NEED AT LEAST ONE REC FOR EVERY SINGLE HOUSE!!!!!! Any more than that is not necessary, but if you can get more then it is recommended.

And no other house knows who you sent recs to, nor are they worried about it. They have thousands of recs of their own already!

You don't have to get a rec for any house.
Of course, lots of houses drop girls because they have to release so many and, after grades, that's the easiest thing to do.
