how likely is it for a girl not to get a bid from any sorority during rush?

I think usually about 3/4 of the girls who go through rush end up pledging. The rest are released or drop out themselves.

That's about right. The majority of the 1/4th who don't pledge usually drop out on their own because they don't like their invites going into the next round. A pretty small percentage get completely released, but unfortunately, it does happen.
