Most universities in Canada do have Greek life - it's just that not every school acknowledges it so some are more "underground". UofT, Western, Carleton and the University of British Columbia probably have the best Greek life and are the closest to how it's like in America. The major difference between Canadian and American frats and sororities are:
Status - Greek life holds power in the states in both social context/ popularity and in the fact that it looks good on a resume and employers like it. In Canada, employers don't care. With that being said, the philanthropy work and other things you do will help/look good on a resume but saying you were in a frat/sorority will not. As well as being part of Greek life tends to increase your grades. Also, students who aren't part of Greek life tend to think it's like the (negative) stereotypes.
Drinking - obviously, frats and sororities drink a fair amount in both Canada and America but a lot of American students go Greek because it means easy access to alcohol - in Canada students have easy access to alcohol already and most are legal anyways so people don't rush solely because of that and it tends to (generally speaking) be more diverse.
Housing - it depends on the school and the frat/sorority but generally speaking American campuses have really nice big houses, while Canadian one's don't always have a house and tend to not have as nice ones (there are some really nice ones in Canada though). For UofT specifically it is Victorian style houses which is pretty nice for Toronto but not as big as American ones.
There is also no "house mom/boy" - in most houses the people that live there are responsible for cooking for themselves and cleaning. A lot have a housing chair who will create a schedule/assign roles when it comes to cleaning. Sorority houses are generally clean but the frat was can be really dirty (depending on the frat and the people living there).
Some Canadian frats/sororities have a "sous chef" position where a member will take care of meals. Some might do every meal everyday but a lot only do dinner and/or only do Monday nights (or whatever night they have their meetings). There is no "meal plan" type thing they do in America. As well as, in Canada it's not really expected for you to live in the house - if they live close to the university a lot will choose to stay at home because it is cheaper.
Rushing - not all schools have Greek week - a lot of times the specific frat/sororities make their own schedules/events, and they don't give out bids or cut people on a rolling basis (it's all at once) and every frat/sorority does their own bid night. There may be some Canadian schools that this isn't true about (UofT sororities I think do Greek week but generally speaking there isn't really Greek week in Canada).
Other than that it depends on the frat or sorority but a lot of Canadian frats/sororities try to stay true to what it's like in America (especially if they're international)
