i will be a junior in the fall, however, with my degree and minor, i will be at A&M three more years instead of two. Will this make a difference when i go through fall rush? Will i be looked on as more desirable since i will have 3 years left (like a sophmore)?

They probably won't even know you have 3 years left. If A&M says you're a junior then sororities will look at you as a junior during recruitment.
