Is one rec letter for each house good? Or should we have two? Are letters of support recommended?

One or two is normal. Some people always get letters of support. With close to 1000 girls any way you can get a step up is wise.

Rec letters are a must with so many girls. Letters of support are not as common or required but any extra to help you stand out among 1000 girls is always good.

If you are asking regarding the upcoming spring recruitment then you need to contact the individual chapters to inquire because they can do their own thing really. For our more formal fall recruitment REC letters are vital. A norm would be two minimum with competition among around 1000 girls being insane. Letters of Support are always a plus but not as necessary as REC letters. No matter what the website may say about a REC being optional, without one you may not make even to the second day with a group.

At least 2 REC letters for every house would be best. Letters of Support for the chapters you are most interested in are a plus but nit required. These are received long before you come to recruitment so they help introduce you to the groups.
