The sororities evaluate each girl on how good of a fit she would be in their chapter - and obviously that means something different at every house. In general, the opinions of every active member a PNM talks to are taken into account when deciding whether or not to invite that PNM back for the next set. The houses absolutely do look at the PNMs' social media, especially the top houses, because it's the easiest way to identify who a girl is and to get a general idea of what she's like.
In terms of odds, think of it this way: the top 4-5 or so houses will cut about half the 600 PNMs after set one, about half of those girls after set two, and about half of those girls after set three. So there will be around 70/75 girls going to the top houses on pref night.

just trust the process and keep an open mind. don't go in thinking that you definitely want to go top tier and rule out the lower tiers. the process generally works that you end up with people you truly fit in with, not necessarily those you want to fit in with. stay calm and let the chips fall where they may; you'll probably end up happy.
