Do sororities care about GPA/What GPA is good enough?

GPA doesn't factor in nearly as much as your conversations, impressions, etc in most houses. If it comes down to deciding between two girls, GPA might be brought up. As long as you have the GPA to participate in recruitment, you should be fine.
I think it might be a bigger factor in Phi Mu and maybe Chi O because they take that ish more seriously. I wouldn't worry about it

3.0 is usually good enough but the higher the better
