Monday of week 2, there will be an event where all of the fraternities will have tables, and you can talk with actives from each house to get a feel on which houses you want to go to. Tuesday is usually interviews, wednesday is usually an activity, and Thursday is a formal pref night. Beginning on Tuesday you have to chose which houses you want to go back to, since there will be conflicting times. Thursday night, you fill out a pref card, and whichever fraternity you pref first will vote on you and determine if they want to accept you as a pledge. Like mentioned earlier, there will be a Facebook event page where rush chairs will post all of the schedules.

Usually fraternities here only consider first bids. There are also cases where second bids get in but those are rare from what I know

You list three on the card and then the cards get delivered to the frat you prefed first. Therefore, in order for your card to get passed down to your second choice, the chair of your first pref would have to individually contact the second choice rush chair and give them your name, which is very hard to do for each of the people who don't get a bid from their top choice and most people just don't bother with it. Honestly they should change it to computer entry instead of cards, that would make passing down names a lot easier

None of the main fraternities ever take second prefs (I heard Sig Chi did last year but that could be rumors), but fraternities like ZBT (they do this every year) ask all the other fraternities for their second prefs, so you could have your first pref be another fraternity and have your second pref be ZBT and you'll definitely get in there (they only get around 5-6 prefs a year so they take everyone).
On the negative, however, having ZBT listed as your second pref could have an extremely harmful effect on getting into your first pref.
