Quota is figured out by dividing the number of PNMs who attend at least one preference party by the number of sororities. So everyone gets roughly the same number give or take a few due to quota additions. So the number taken is completely dependent on how many PNMs are left for preference.

Very few PNMs are dropped completely. Usually the few who are were dropped for pretty obvious reasons. A lot of those who don't get a bid dropped out on their own when they decide they are too good for the houses they have left, which is a really dumb thing to do. Honestly recruitment is not that competitive here compared to other schools. Some of the supposed top houses are more competitive, but if you keep an open mind then that shouldn't be an issue.

Keep a completely open mind. Rank all the sororities you are invited to for preference which is maximizing your options, and you are guaranteed a bid. Our sororities are large, and trust me, you will find your tribe within your house even if you don't end up meeting your people during recruitment.
