apple watch & texting

I know they have us hand them our cell phones during recruitment but if I wear my Apple Watch do you think they will know that I'm using it to text? What happens if I get caught? It's seems pretty stupid that we have to give them our phones. Can't I just keep my watch in my bag and secretly text? Giving them our cell phones seems so 2005.
