My two choices are ADPi and Phi Mu. I really love ADPi. What are my chances of getting a bid from them and not phi mu?

Would you be comfortable in either sorority? If yes then put both down. If you don't see yourself in phi mu. Why waste your time or theirs by taking a bid ? You might be taking a bid from another girl who truly sees herself in phi mu. Pledge where you can be an asset and be happy. No organization wants dead weight.
