Pretty slim. If you accept all of your offers you should get a bit somewhere. Just don't get your heart set on a particular house or limit yourself to a "tier". If you keep an open mind you should end up somewhere.

Not likely if you go into the process with no assumptions or expectations, and put forward your best, most authentic "true self." Still, the process is imperfect (to say the least). Do fantastic girls fall through the cracks and end up bid-less? Yes, that absolutely happens. And if it does, know that is not the end of the world, does not reflect upon you as a person, and there's no shame in re-rushing or trying informal/COB, or finding a club or other org to join. There are SO many opportunities to get involved and have a great college experience that do not involve Greek life.

Getting a bid from a house where you can be yourself and be supported is amazing. But also know that not getting a bid is far from the end of the world.
