questions: can someone explain what a "tap" is?

I'm so confused. What are the letters under the doors that people are able to get. Are they actual invitations into the society? Or are they just request to move on in the process (like an interview)? I don't really get it.
I'm also confused about the whole selection process. Taps are not binding until tap night, which is not until April 19th! So what is happening between now and then? Will societies give "offers" before then? How many? and what to stop juniors from accepting offers now and then completely rejecting them later?
If someone could please take the time to answer these questions that would be awesome.

These initial cards are for an interview, it's not an invite to join. Most have one or two (sometimes three) rounds of interviews and there are cuts every time. You can get a first round invite and still get cut.
Pre tap is the Thursday before tap where societies give out invitations to actually join to their top choices, who don't have to accept. The last week is pretty crazy because people accept and sometimes drop if they get invites from bigger societies, so the last week there are sometimes more invites given out for last minute interviews so the societies can fill out their class. And in terms of size different societies vary.
