No, they don't get "leftovers". They participate in the very first round of open house and then stop. Then, after recruitment is over, they start a hard push for members via a national team focused on obtaining premium/outstanding women who are interested in starting (or re-starting in both cases since the new sororities at UK have been here previously) a new chapter. Their standards are going to be just as high as established chapters already at UK.

but the majority of girls rushing will get a bid from another sorority especially since the newer sorority will only talk to
girls for 15 minutes on open house and that's it. so at the end of that there are few girls left

When they talk to girls they will be appealing to those that are looking for the opportunity to start something new on campus. Generally, some women who feel that the new group will be a better fit for them or give them the experience they are looking for will drop out of formal recruitment to go through the process with the new group.
Also, there are a lot of girls that come to campus and wish they had registered for recruitment but didn't...so they aren't "leftovers".

I wouldn't say leftovers either because no one is a leftover. however no they will not be as picking as other sororities because at the end of the day they are new and do want girls
