Does everyone in a sorority know your gpa during rush? Is it very public, how often do they drop based on gpa

As long as you meet the minimum required no one cares.

Everyone knows. Some houses pay more attention to gpa than others, even if you're above the minimum

Some of them are more concerned than others. Depends on which sorority and what else you bring to the table.
