if on pref night you list two sororities that youd accept bids from, does that 100% guarantee you a bid?

You're not guaranteed a bid until you get a bid

Because it's done by a computer system, technically no. But if you went to two pref parties, you'll 99.9% get a bid to one of those. My advice to ensure a bid is don't put all your eggs in one basket.

You're more likely to get a bid if you don't suicide a sorority as well. For example if you pref at kappa and sigma kappa and only want kappa, don't just list kappa. Still put both sororities down because the way the system works, you're less likely a bid if you suicide a sorority. Note that if you're a legacy this doesn't apply to you because the system works differently
