when do you pick sorrority members and chances

Formal recruitment is in the fall. You sign up for recruitment and spend a few days going to every house and meeting members, etc. During that time, you are cutting houses while houses are cutting girls. You go to a final formal round at a couple of houses and after that, rank which one you prefer first. They are doing the same with the girls. On bids day, everyone gets an envelope with the house they matched up with. Almost everyone should get a bid if they complete the entire process. Some people drop out if they get cut by the houses they really wanted. You'd have to have terrible grades or be exceptionally socially awkward to have all the houses drop you.
All joking aside, I hope your grammar/spelling doesn't reflect your GPA. Every sorority has a minimum GPA requirement.

Some girls do, however, make it all the way through recruitment and end up without a bid.

^ or they don't rank high enough on either bid list. Bid List A = alphabetical, Bid List B = ranked. So if PNM1 is on ABC's list A but goes XYZ, the 1st PNM on list B moves up. If you're low on the B list for both houses and quota is filled before they reach you, you get screwed. Doesn't happen very often though.
