when do we find out if any sororities even called us back for philanthropy? if no one called me back do I have to wait until Friday to find that out?

No, your rho gamma will call/contact you prior. If you do hear anything by Thursday night (although you most likely got a bid as I believe most rho gammas have their schedules already) then you got called back to at least one. You won't know which called you back until you arrive on Friday, though.

My tho gamma said she wouldn't even email us until Friday so you'll probably have to wait all week
