About how many girls go through fall rush and about how many actually get bids?

Probably 350-450 with almost all getting at least one guaranteed bid. How many girls actually accept their bids is another story. I've seen some girls open their envelope, see their only bid is from one sorority they didn't want, and then just throw it down and walk away angrily. Many are called, few are chosen.
