There are 4 rounds stretched over 2 weekends in the spring.

Round 1: Open House, you meet the girls from every house and get a feel for each chapter. You rank your top 8/11.
Round 2: Sisterhood, you will go back to the chapters you've been invited to, talk to more girls and watch a skit. This is a fun round because typically all the sisters are dressed up in theme for their skit. You rank your top 5/8.
Round 3: Philanthropy, you talk to girls and do some sort of activity related to the sororities philanthropy. You rank your top 2/5.
Round 4: Preference. This is a more serious round, you can dress however you want and sisters are usually wearing black or white dresses. You talk to one or two girls for the entire round (one hour), girls give speeches about why they picked their chapter, you watch a slideshow, sometimes there is a ceremony. Then you rank the order of your top 2 and wait for the awesomeness of bid day!

How are you invited back?

You are invited back by the chapter. Membership selection is different for each chapter and is private so we can't REALLY tell you what each chapter is looking for, but think of it as you are selling and marketing yourself. What is awesome about you? Do you have a club on campus or major that you're really passionate about? Were you class president? Are you just really friendly and funny and think you would make a great addition to the chapter? Find a way to show that off! It seems impossible to do in such short conversations with sisters early on but it can be done.

Every chapter is selective and every chapter cuts girls based on different things, but stay positive during recruitment even if your current "favorite" cuts you and know that whoever still is inviting you back really does want you to be there! They wouldn't invite you back otherwise!

what is the likelihood of getting cut from all 11 of the sororities?

Unlikely that you'll be dropped from all 11. Most girls who drop recruitment do it because they don't like the chapters they have left. But they have to learn that every chapter has amazing things to offer!

Anyone that gives a bid to you believes in you and I urge you all to take a chance and trust the system.

Tons of girls who drop regret it. I can guarantee you will have a blast in Greek life no matter where you end up :)

^ this!!!! A thousand times this!!
I was so close to dropping out of rush. I had 1 chapter left and it was the last place I thought i wanted to be, but thank god I stayed through preference round and bid day. My pledge class was amazing, my big is amazing, I can't imagine being anywhere else!!
Yeah, you will become obsessed with a few chapters before rush starts this spring/during the first few rounds, and you may get dropped by them and it will crush you at first, but if you stick through recruitment to bid day and through the pledge process I guarantee you will end up being way happier than if you had never gone Greek at all.

I agree with everyone above who's talking about being open-minded during recruitment. You'll really shoot yourself in the foot if you drop out before bid day. If you end up in a chapter you didn't want at first, give it a few weeks and see how you feel. Chances are, you'll end up loving it! I know from experience.
